Still Proof and Cask Strength Tequila
Recently in Arizona I sampled the Don Fulano Fuerte and the Don Fulano Blanco head to head in a flight again and was reminded how much I enjoy the higher proof product. Night and day in comparison.
I'm surprised at the small selection of 100 proof + Tequilas on the market. The flavor on the product that comes directly from the still or the barrel is excellent, and it would be great to allow the consumer the option of drinking it straight, diluting with a splash of water, or over ice. Similar to what they do with Whiskey and Bourbon.
If you visit any distilleries and they are in production, ask to sample a bit from the still, and if you're lucky, you may get to try some cask strength Tequila as well. Hotter than normal, but incredible flavor!
