Default Agave Nectar

After acing the Partida tequila quiz, I opted for the Agave nectar prize, which I had never tried before that time. They sent me a logo trinket on a piece of leather instead. Since it was free, I didn't complain.

FYI: On a recent trip to my local Target Superstore I ran across "Wholesome Organic Raw Blue Agave Nectar." $3.99 for a 12 oz bottle. It's great in place of honey & sugar being sweeter than both. I've even tried a teaspoonful in my Margarita recipe. Since I like my Margarita's more tart than sweet, I'll leave it out from now on!

I swear by this stuff! No more simple syrup in my margaritas anymore - just the juice from a lime, a tablespoon of agave nectar, and some good tequila and I'm very happy.

Haven't tried cooking with it, though; I'm pretty sure it won't behave like granulated sugar so some adjustments would need to be made.

I'll have to check out Target for that price. I have been paying almost $7.00 at my local health food store for the same brand & size. That stuff caps off a Margarita with a natural sweetness that you will never find with simple syrup! Also, I used it as a glaze for a spiral baked ham and it came out amazing!

Several places online sell the Agave Nectar. My question is this: Which is preferred for Margaritas... the light, the dark or the raw? The raw is cooked with a lower heat and may retain more of the agave taste. The dark supposedly has a maple taste. The light is pretty much a sweetener. What's everybody using?

I've used dark and light, I prefer light...

I get them at VitaminShoppe.

I use them all, but mostly the light. I think the light nectar works best and allows more flavor from the Tequila.
