The venerable instituton, La Academia Mexicana del Tequila, A.C. , Guadalajara Mexico and US, announced their endorsement of  the Polished Palate for its contribution to the Tequila industry via our Spirits of Mexico event.  The Academia, launched as an official entity in September 2000, has 5 chapters in Mexico and 1 in the US.  Phillip Soto Mares, Director of the US Academia, furthers, “The Polished Palate is the first and only organization outside of Mexico to be so sanctioned”.

Mr. Mares, Catador, was officially recognized by Mexico’s Academia Director, Andres Rodriquez-Reynoso, as the 1st US Director at a ceremony held on December 8, 2006 at El Agave Restaurant in Old Town San Diego.

Additionally, Dori Bryant, President of the Polished Palate, has been chosen to receive credentials as Tequilier Ambassadeur on behalf of the Academia.  Over the next few months, a list of courses must be completed to obtain final certification.
