1 beef flank Steak (1 1/4 to 1 1/2 lbs)
1/4 cup of 100% Agave Tequila
3 tablespoons of fresh lime juice
1 tablespoon seeded and minced jalepeno peppers
2 large garlic cloves
Avocado Salsa (see recipe below)
8 (6 or 7 inch) Flour Tortillas
1 large red bell pepper, cut lengthwise into 4 strips
1 large green bell pepper, cut lengthwise into 4 strips
4 slices red onion, cut 1/4 inch thick
1) Place steak in large resealable food storage bag. Combine tequila, lime juice, jalepeno and garlic on small bowl; pour over steak. Seal bag; turn to coat. Marinate in refridgerator 1 to 4 hours, turning once.
2) Prepare Avocado Salsa. Wrap Tortillas in heavy duty foil.
Avocado Salsa:
1 large ripe avocado, coarsely chopped
1 large tomato, seeded and diced
3 tablespoons chopped fresh cilantro
1 tablespoon vegetable oil
1 tablespoon fresh lime juice
2 teaspoons seeded and minced jalepeno pepper
1 clove garlic, minced
1/2 teaspoon salt
Place avocado in medium bowl.
Gently stir in tomato, cilantro, oil, lime juice, jalepeno, garlic, and salt until well combined. Let stand at room temp while grilling fajita steak. Cover and refrigerate if preparing in advance. Bring to room temp before serving. Makes about 1 1/2 cups.
3) Spray grid with nonstick cooking spray. Prepare grill for direct cooking. Remove steak from bag; discard marinade. Place steak, bell peppers, and onion slices on grid over medium hear. Grill, uncovered, 17-21 minutes for medium rare or until desired doneness. Turn steak, peppers, onions halfway through grilling time. Place tortilla packet on grid during last 5-7 minutes of grilling; turn halfway to heat through.
4) Transfer steak to carving board. Carve steak across the grain into thin slices. Slice bell peppers into thin strips. Separate onion slices into rings. Divide among tortillas; roll up and top with the avocado salsa.
Makes 4 Servings.
I loved these fajitas. They came out delicious and I wanted to let everyone know about the recipe. It calls for tequila but you could also use beer and the flavor is still amazing. I got this out of a "Favorite Brand Name" cookbook and made them last night. I will try to post a picture out of the recipe book for yall. I didnt take a picture of mine because they werent as pretty
