Default What Are You Eating For Memorial Weekend

Here is a great Appetizer from Cabo Wabo for this holiday weekend and of course it should be eaten with a nice glass of Tequila (your choice)

Grilled Jumbo Shrimp with Cilantro, Honey and Olive Oil
Thanks to our friend Dustin Meeker for this recipe.

2 Garlic Cloves, chopped
1/4 cup Honey,
1/4 cup Olive Oil,
1 small handful Chopped Cilantro,
12 Jumbo Shrimp Shelled and Cleaned,
4 Bamboo Skewers,

Mix garlic, honey, olive oil and cilantro in medium sized mixing bowl. Skewer the shrimp and pour honey mixture over them. Cover with plastic wrap and refrigerate for about an hour. Season shrimp with salt. Cook over gas or charcoal grill about 3 or 4 minutes per side or until brown. Don\\\'t overcook!

That sounds really tasty - especially the part where you sample it with some favorite tequila.

We are having 40 to 50 people over on Sunday for a BBQ - thankfully only a couple of tequila drinkers - the others are happy with scotch or beer - and will be having hamburgers and hot dogs. Monday, however, it will just be my wife and I and the kids + girlfriends / wives - about 10 and I am thinking of going with the shrimp for an appertizer.

FYI....you can go one step further and marinate the shrimp before the process with garlic, cilantro and tequila for about 30 minutes and then follow the receipe....just don't let the shrimp marinate to long or the alcohol will start to deteriate the shrimp.
