Tequila Chipotle, Lime Shrimp Recipe

Ingredients:

20 med shrimp (peeled and devained)

3 limes

1 T chopped garlic

1 t chopped chipotle peppers

2 oz white wine

2 oz tequila

salt to taste

2 T olive oil


Instructions:

Season shrimp with salt. Heat medium saute pan on high heat add olive oil,and add shrimp,cook till shrimp turns pink.

Add garlic and cook for about 30 seconds. Remove pan from heat,and add chipotle ,wine and tequila then return to flame.

Once half of tequila and wine have reduced by half add lime juice. Then add shrimp to bowl and garnish with chopped scallions.

I made this last weekend for some friends that came over, it is excellent. We drank herradura anejo with dinner, and I used herradura blanco in the shrimp.
