Default Tequila pairings w/ food

What tequilas go with what food? Is it like wine: whites go w/ chicken and fish, reds with beef? I know it's what your individual tastes are, but are there generalities? Also, in your opinion, what tequila would be good w/ a sweet cake dessert (tres leches)?

Mexican food! Anything spicy, grilled, served with salsa accompaniments, or flavored with citrus. Try to mimic the flavors of tequila.

Here's a list of flavor affinities:

Lime juice
Lemon juice
Orange juice
Salt
Cointreau
Chile peppers
Cilantro
Fruit juice
Ginger
Grenadine
Pomegranate juice
Sage
Sugar
Vermouth

Also, wine pairing is much more complex than whites with chicken/fish.. Roasted chicken and salmon match beautifully with Pinot Noir. For the tres leches cake, it seems like a sweet extra-anejo such as, Don Julio 1942 would pair quite well.

You can always enjoy it with something light like a single cracker; better buzz that way.

Seriously, ChefRob summarized it well. I often make Indian food (spicy) and it compliments it well too.

I've never been a recipe guy. It goes back to all of my years as a former restaurant chef. Anyway I'm having a small gathering (10 -12 ppl.) at my tequila bar tomorrow night and I will be mixing all kinds of different agave spirits. I just wanted to share the menu I have planned for the evening: OBTW, as allways, all T.net amigos are welcome to attend!

SENOR JIM'S MENU

* WARM TORTILLA CHIPS W/FIRE ROASTED TOMATO SALSA & GUCAMOLE

* MEXICAN SHRIMP COCKTAIL W/FRIED JUMBO PLANTAIN STRIPS

* GRILLED CHORIZOS W/SPICY DIPPING MUSTARD

* SEARED PASILLA CRUSTED RARE TUNA W/ SMOKED CHIPOLTE REMOULADE

* AGED TEQUILA SIMMERED PORK "CARNITAS" W/ CORN OR FLOUR TORTILLAS

* BBQ CHICKEN QUESADILLAS W/ CARMELIZED RED ONIONS, SMOKED CHEDDAR & LIME CREAM

* ARROZ CON FRIJOLES

* AGAVE NECTAR BAKED APPLES TOPPED W/ 1921 TEQUILA CREAM

Crap, it's Saturday night 10:30 CST, that means it's way toooo late to make it to the tequila bar for that awesome sounding meal!

Oh to be in the Tampa Bay area right now!

I hope everyone had a nice time with what promises to be an elevating gastronomical experience!!

I'll see what I can come up with Greg. I'm sorry to say that I never measure anything when I cook so I'll someday try to post some kind of recipe. I just go by a little splash of this, a sprinkle of that, a dash of this, etc........
